This One-pot Italian Spaghetti Casserole is a delicious and easy to make dish. It is bursting with Italian flavors that come together quickly. Absolutely perfect for those nights when you are rushed for time but still want some homemade goodness. It cooks up all in your skillet, so clean-up is a breeze – score!
I have an absolutely fabulous Homemade Spaghetti Sauce recipe – but it takes all day long! I don’t always have that luxury or I forget to throw it in the Crock-pot. So – I wanted something similar, but quick. Anything quick and easy is a winner in my book. The secret is in a can of Italian Style Stewed Tomatoes – whirled through your blender or Ninja. I love my Ninja. My oldest has gastroparesis, so I have to break up most of the veggies he gets. The Ninja is perfect!! He is also Mr. Picky – he rolled his eyes when I said I was making an Italian Spaghetti Casserole. (He only likes regular spaghetti noodles – no angel hair, no rotini, no….you get the picture) Guess who ate most of this??? Luckily I did have a little bit leftover – he also devoured almost all of my Hearty Crock-Pot Beef Stew two nights later. Kids!
I start out by browning the ground beef and onions – toss in a bit of bell pepper if you want to. Drain. Add a can of tomato sauce and your crushed Italian style stewed tomatoes. Throw in your seasonings and let simmer for about 10 minutes if you have time – if not move on to the next step. Once the flavors have mingled, add about 2 1/2 cup of water. Bring to a low boil and add about a cup of your favorite style pasta – I used a mini Penne, but Rotini and others would work as well. Continue simmering uncovered for about 15 minutes until the water is mostly absorbed and the pasta is tender. Mix in 1-2 tablespoons of tomato paste to thicken slightly and add a bit more flavor. Sprinkle with some freshly grated mozzarella cheese. Bake for about 10-15 minutes on 375 – then broil on high until the cheese is toasted to perfection. Keep an eye on it while broiling, as it will brown pretty quick. Let it rest while you make your favorite toasted bread.

- 1.5 lbs Ground Beef lean if possible
- 3/4 cup Sweet Onion diced
- 1/4 cup Bell Pepper optional - diced
- 1 15oz can Tomato Sauce
- 1 15oz can Italian Style Stewed Tomatoes blended
- 1 tsp Garlic
- 1 tbsp Italian Seasoning
- 1 Tbsp Oregano
- 1-2 Tbsp Tomato Paste as needed
- 2 1/2 cups Water
- 1 cup Mini Penne Pasta or your favorite
- 8 oz Fresh Shredded Mozzarella Cheese
Pre-heat oven to 375 degrees
In a 12-inch skillet, brown your ground beef, adding the onions and bell peppers (if using) about halfway through.
While the meat is browning, whirl your Italian stewed tomatoes through your blender or Ninja to crush them.
Once beef is browned and onions are translucent and softened - drain well.
Add the tomato sauce and blended up Italian stewed tomatoes.
Add seasonings and blend thoroughly.
Simmer covered on low for about 10 minutes - time permitting.
Add water and bring to a low boil.
Add pasta. Simmer uncovered for about 15 minutes, allowing water to be absorbed and pasta to soften. Stir occasionally to prevent sticking.
Add 1-2 tablespoons of tomato paste to finish thickening it up and to add a little bit of a richer flavor.
Sprinkle evenly with grated cheese.
Bake on 375 for about 15 minutes or until cheese is melted and bubbly.
Broil on high for1-3 minutes until cheese is toasted to your liking.
Allow to rest for a few minutes while you toast your bread.

If you don't have a 12-inch skillet - it very well might fit in a 10-inch. I have not tried it, but I think the main issue would be not sloshing it out when stirring.
