Baked Ravioli

Seriously,  sometimes we just don’t have enough time or patience or ……. whatever.  It happens to all of us every now and then.  I love to cook, but since my son passed away, I just don’t always have the oomph or energy.  I usually try to keep a few staples in the freezer and cabinets, just for these occasions.   Half a bag of frozen ravioli (usually reserved for my special fried ravioli), a little meat if available, your favorite jarred sauce and some cheese.  Easy-peasy – dinner on the table in a New York minute.  I almost always have some ravioli in the freezer – it makes for one of the best appetizers ever.  I prefer beef – but have you seen the varieties available, take your pick.  The meat in the dish is definitely optional – short on time or resources, skip it. Though there would be mutiny in my household if I did.  I’m all for whatever makes life easier.  It all cooks up in one pot – can I get a hallelujah!!!  Add a salad and bread – Dinner in less than 30 minutes.

Baked Ravioli

Ravioli, baked to perfection.  One of those quick and easy meals that taste like you've been cooking all day long.

Ingredients

  • 1/2 bag Ravioli
  • 1/2 lb Hamburger Meat
  • 1 24oz jar Spaghetti Sauce
  • 8 oz Mozzarella Cheese shredded
  • 1/4 oz Parmesan Cheese shredded optional

Instructions

  1. Brown your meat in your favorite cast iron skillet.  Drain well.  

  2. Add the spaghetti sauce and ravioli. Stir until thoroughly mixed.

  3. Cover and simmer for about 10- 15 minutes.  Stir often but very gently.  

  4. Heat oven to a high broil.

  5. Once ravioli is cooked, sprinkle with grated cheese.  Broil on high until cheese is nice a browned.  

  6. Serve with a salad and garlic bread - good to go.
